An upscale chain with over 30 locations nationally, Roy's serves an impressive selection of Hawaiian fusion food. The Lakanilau Roll ($16) is especially popular, a sushi roll with avocado, tempura asparagus, and snow crab, wrapped in a slice of Kobe beef that is seared with a blowtorch.
This spirit of innovation and interesting combinations of flavors can also be found at the bar. The 1988 cocktail ($10) was named as a tribute to the founding of the first restaurant by chef Roy Yamaguchi in Honolulu, Hawaii. Twenty years later, it is still a great cocktail, with Absolut Ruby Red vodka, Lychee liqueur, Patrón Citronge Liqueur, pomegranate juice, and grapefruit juice. The lychee fruit garnish tastes better than it looks.
