Every cuisine eventually gets a modern spin - at the Big Sugar Restaurant and Rum Bar, it's modern Caribbean food served daily. Diners can select dishes from a tapas-styled menu of small plates or opt for full sized entrees. Flavors from fruits like mangos, limes, and tangerines appear frequently on the menu, with dishes such as Voodoo Lobster Rolls, Dominican Snapper in Banana Leaves, and the Burnt Sugar Cane Pork Chop. The Rum Bar is exactly what it promises: endless varieties of fruity cocktails made from specialty rums.  If Ernest Hemingway were to roam Sarasota, he'd likely be found at Big Sugar.
